quick and easy meals for 1 or 2

Sauteed Chicken and Sundried Tomatoes

serve it with pasta or rice. You could cook up some penne pasta and put it in with the chicken stuff and toss it a few times before serving or do the uncle bens thing

1 small jar (8-10 oz.) diced oil-packed sun-dried tomatoes,
6-8 chicken tenders cut into 2-inch pieces
1 bunch broccoli rabe, chopped. if you can’t get broccoli rabe or don’t like it you can use a bunch of fresh basil or spinach
1/2 cup sliced pitted black olives
1/4 cup chicken stock
Salt and pepper to taste
1/2 cup crumbled feta cheese
some flour for dredging
Heat the oil from sun-dried tomatoes in a large skillet over medium-high heat. Dredge the chicken in some flour and cook about 5 minutes, until golden brown on all sides. Add the sundried tomatoes, broccoli rabe (or basil or spinach), olives, and 1/4 cup stock, season with salt and pepper, cover and cook 3 minutes, until broccoli rabe (or whatever) wilts and chicken is cooked through.

SERVE IT UP!!! With the pasta or rice. Top it with the feta cheese. Don’t forget some good crusty Italian bread and some wine of the day!!

Chicken and dumplings

Another warm and fuzzy, quick and easy meal

3 boneless chicken thighs or 4-6 chicken tenders
1 (10.75 ounce) can condensed cream of celery soup
salt and pepper to taste
1 (12 ounce) package refrigerated biscuit dough
In a large pot over high heat, combine the chicken with enough water to cover, and boil for 15 to 20 minutes. Drain some of the water from the pot, leaving about 1-1/2 cups in the pot. Remove chicken pull or cut it into bite size pieces; return to pot.
Reduce heat to medium, and add the can of condensed soup. Season with salt and pepper. Pull 1/2 of the biscuit dough into pieces, and add to the soup. Simmer over medium heat for about 8 minutes, or until the dough is cooked through.

SERVE IT UP!! with maybe a little salad and maybe some white wine!
