Poached Salmon Serves 3-4.
This is good and easy. I’ve done it lots of times.
1 to 1½ pounds salmon fillets, skinned
Juice squeezed from 1 lemon
½ cup white wine
½ cup water (or chicken stock)
A few thin slices of onion
sprinkle of some dried dill
1 tsp. dried parsley
salt and pepper to taste
Put wine, water, dill, parsley, lemon juice and onions in a frying pan, and bring to a simmer on medium heat. Place salmon fillets in the pan. Cook 5 minutes or to desired done-ness. Do not overcook. Serve topped with freshly ground black pepper.
SERVE IT UP!! With your carb and veggie de jour, some good crusty bread and the rest of that white wine!!!
