quick and easy meals for 1 or 2

Pork tenderloin with stuff

This is what Gammy and I did tonight.

We have some great house guests and we want to spend time with them and give them a great meal.

Pre heat oven to 450 degrees.

We bought a med. Sized pork tenderloin and split it lengthwise so it would cook faster. Then sprinkled red pepper flakes, garlic powder, crushed black pepper and dried basil. (sound familiar?) . I put it on a stove top grill. Then I sliced up 4 roma tomatoes and did a half a med onion julienne. Put those in a bowl and added extremely virtuous olive oil, some grated parmesan, a few dashes of balsamic vinegar, salt, pepper, squeezed a half a lime in it and some dried basil. Mixed it up. I put some of those frozen French fries on a cookie sheet in the oven. Should be ready when the pork is done.

Grilled the pork until real firm. If you start to slice it and it’s still too pink then just put it back for some more heat.

Slice it up and serve it up!!! With some good Italian bread and some red wine!!
