quick and easy meals for 1 or 2

Salmon with green salsa (salsa verde)

Gammy and I like salmon and this a neat and easy way to do it. Serves 2

We do it with French fries and salad

2 Salmon Fillets, 2 Tbsp. olive oil

¾ cup bread crumbs1
Bunch arugula or basil or spinach
1 med garliv clove
1/4 cup good olive oil
2 splashes of white wine
1 Tbsp. Dijon mustard if you don’t have Dijon any mustard will do in a pinch
Salt and Pepper

Brush the salmon with the oil and sprinkle on the crumbs. Place in a very hot oven, about 375-400 and roast until done, but still moist inside. (cooking time depends on the thickness of your salmon steaks). Mix the remaining ingredients in a blender or food processor and pulse until blended. Serve each steak topped with a drizzle of the sauce.

SERVE IT UP!! With some lemon wedges, crusty bread and some white wine!!
