quick and easy meals for 1 or 2
London broil
Gammy and I have done this so many times,,so many ways. We’ve done it on the grill outside, on a stove top grill, in a cast iron skillet, in the broiler, etc.
We usually do fried slices of potatoes with some onion slices and rosemary thrown in for a carb in a frying pan and a salad.
In the meat section you usually can find a “London broil”. If you can’t then a thick slice of top round will work just as well.
Coat the meat with garlic powder, ground black pepper, paprika, salt, dried basil and anything else that makes you happy.
Grill the meat on the grill,,,skillet,,broiler ,,,whatever until firm, but not like a brick, to a poke with your finger. (about 4-6 minutes per side). Let it rest for a few minutes before you slice it , then slice it thin across the grain, thin and across the grain, is important!
SERVE IT UP!! With some good crusty bread and some red wine!!
