Linguine with White Clam Sauce
½ - 2/3 lb. of linguine pasta
3 tablespoons olive oil
½ med onion, chopped
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 (6.5 ounce) can minced clams, drain and save the juice
3/4 cups milk
2 tablespoons white wine
1/2 tsp dried parsley
salt and pepper to taste
Get the water boiling, add a dash of salt and cook the pasta ‘til it’s a little under done. Drain it.
Heat olive oil in a med/large frying pan over medium heat. Do the onion and garlic until soft and translucent. Stir in flour, then the saved clam juice. Gradually blend in the milk. Stir in wine and parsley. Cook, stirring, for 5 minutes, or until sauce thickens. Mix in the clams. Put the pasta in the pan, toss a little and
