quick and easy meals for 1 or 2

Tilapia Parmesan

This super easy, fast and good

We usually do microwave baked sweet potatoes and whatever our veggie choice for the day is. If fast is important some salad,, maybe sliced tomatoes and onion with a little spinach if you have it and bottled dressing

This won’t keep very good as a leftover so only use as many fillets as you are going to serve tonight. Stella helps us if we have a little too much.

1/2 cup grated Parmesan cheese
1/4 cup butter, softened
1 1/2 tablespoons mayonnaise
squeezed juice from 1 lemon
1/4 teaspoon dried basil
salt and pepper to taste
1/8 teaspoon onion (or garlic) powder
tilapia fillets,, these amounts are for 3-4 fillets adjust a little for more or less fillets


Preheat the oven's broiler. Pam a broiling pan or cookie sheet big enough to handle the fillets.

In a small bowl, mix together all the ingredients except the fish. Set aside.

Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

SERVE IT UP!!!! With some crusty bread, lemon wedges and white wine!!
